Authorized and prohibited products
In order to reduce the production of pancreatic juice and the burden on the inflamed gland, the following should be completely excluded from the patient's diet:
- Soups cooked in rich meat, fish and mushroom soups, as well as complex soups - cabbage soup, pickles, borscht. Cold and dairy products excluded.
- Bread - bakery products made from wheat flour / rye flour, puff pastry and pastries, pies baked in butter, tortillas.
- Fatty meat - pork, lamb, duck, goose - sausage, offal, canned and smoked meat.
- A fish. For greasy varieties, smoked, salted.
- High fat milk and lactic acid products.
- Groats - millet, pearl barley, wheat, corn.
- Fried and hard boiled eggs.
- Vegetables - turnips, radishes, garlic, pepper, eggplant, cabbage, spinach.
- Sweets - jam, ice cream, fresh dates, grapes, bananas, figs.
- Spicy spices.
- Coffee, strong brewed tea, coffee, soda, grape juice.
- Refractory fats - pork, beef, lamb.
The recommendations of nutrition experts should be taken into account when developing the daily menu and only approved products should be used. It:
- dried bread, biscuits, homemade biscuits;
- vegetarian soups with the addition of pureed vegetables - potatoes, zucchini, pumpkins, carrots - pasta, semolina or oatmeal;
- lean meats - chicken, rabbit, turkey - in the form of steaks, souffles, dumplings, beef stroganoff;
- low-fat fish species - pollock, carp, cod;
- cereals - oatmeal, semolina, rice - used to make cereals, casseroles, puddings;
- low fat lactic and lactic acid products;
- steam omelette without yolk;
- vegetables - potatoes, zucchini, beets, pumpkins, cauliflower, carrots, green peas;
- sweet berries and fruits in the form of mousses, jellies, puddings, baked apples;
- sauces - cooked in dairy products and vegetable soup (the latter is not toasted when using flour);
- butter and vegetable oil;
- weak lemon tea, still mineral water, rosehip broth, water-diluted juices.
Diet for acute pancreatitis
If we are talking about what diet is recommended for the acute form of inflammation, this is the 5P treatment chart. For the first two to four days, a full feeling of hunger is recommended for the person. Only liquid intake is allowed - rosehip decoction, Borjomi (without gas), weak tea. The patient then switched to nutritional therapy. The menu may include unsalted but carbohydrate-rich foods.
Approximate list of dishes to add to the menu:
- steam on omelette proteins;
- meat souffle;
- fish and meatballs;
- pureed soups - rice and oatmeal - and vegetarian options;
- vegetable purees;

For lunch, vegetarian soups are allowed, such as borscht, cooked fish garnished with well-cooked rice, cooked beef, curd casserole, steamed chicken, pasta with cooked minced meat, toasted. Snack options: allowed fruit jelly, vegetable rolls, fresh berry jelly, fruit pudding, baked potatoes, sandwich with butter and a slice of cheese, bean puree.
Dinner: baked apple puree and low-fat yogurt, rice porridge with raisins, varenets, vinaigrette and yogurt, steamed cauliflower, a glass of yogurt, zucchini caviar, kefir, steamed omelette, fermented baked milk, rice porridge pudding.

Nutrition for the combined course of inflammation of the pancreas and gastritis or cholecystitis
If the underlying disease is accompanied by cholecystitis, the menu may include:
- slimy soups made from rice, oatmeal or groats;
- mashed porridge cooked in water, it is strictly forbidden to give milk and butter;
- vegetable juices, compotes;
- homemade white bread croutons;
- mashed cooked meat, fish;
- low fat cottage cheese.
In the case of a combined cure for pancreas and gastritis, the menu must include oatmeal, rice and semolina soups, to which you must add egg yolks and a little butter, mashed potatoes, carrots, beets, milk or cream. , steamed souffles, slices, etc. dumplings made from minced meat and fish.
The strict option is only recommended during the acute period of the disease. After stabilizing the condition, the person switches to the diet recommended for chronic pancreatitis.
Dietary characteristics in childhood
The diet of children is guided by fragmentation, maximum degree of grinding, compliance with culinary processing requirements and variety. Small portions, if served frequently, prevent the child from becoming hungry. In this case, there is no violation of the metabolic process.
The daily caloric intake is calculated based on the weight and age of the child. In the remission phase, the menu may include fresh vegetables and fruits (to a limited extent), but the diet is based on cereals with milk, minced meat dishes - chicken, turkey, vegetable soups without the addition of meat, fish - cooked or fried, cooked vegetables, dairy products. It is allowed to give the child marshmallows, marmalades, marmalades, honey in small quantities and daily.

Mashed vegetables soup
Cook until completely cooked potatoes (2 pieces), carrots and half a little zucchini. Drain the broth into a separate bowl and puree the vegetables in a blender. Pour the puree with broth to the desired consistency and bring to a boil. Cook for 3 minutes. Serve warm with a spoonful of sour cream in the soup.
Halpuding
The carcass shall be divided into two fillets. Bring to the boil first and rub through a sieve. The second part is minced in a meat grinder. Combine the two masses, add the egg yolk, butter and salt. Knead. Divide into dosage forms and evaporate.
